☆ The Sourdough bacteria culture is called Lactobacillius or Lactic Acid bacteria that is also used in Yooghurt, Cheese and Pickles. It is the bacteria that gives Sourdough Bread its characteristic, distinctive sour flavour.

 

☆ Research has shown that Sourdough Bread is easily digestible, sometimes even for those, who are sensitive to gluten, and its nutrients more readily absorbed by our gut than yeast breads.
